To dice cucumbers first cut off ends and peel. Cut in half lengthwise, using a small spoon scoop out seeds. Take the hollowed cucumber and cut strips lengthwise. Depending on the size you want, you can cut these strips either 1/4 inch or 1/2 inch wide. Turn cucumber so that you can cut across strips again either 1/4 inch or 1/2 inch wide.
