Avocados are best eaten raw in salads and dips as they turn bitter if they are cooked. The only place I have seen Avocados as part of a cooked dish was in Mexico where they are sliced and added to chicken soup before serving, but even then, he Avocados themselves were not cooked. Guacamole is very popular in Mexican and Southwestern cuisines. This tasty version takes only 3 minutes to make! (Taken from page 137 of the 2nd edition of the World's Healthiest Foods book.)
Prep and Cook Time: 3 minutes
Ingredients:
1 medium ripe avocado
1 TBS lemon or lime juice
1/2 cup cilantro, chopped
sea salt and pepper to taste
optional: diced tomatoes
Serve with:
1/2 cup carrot strips
1/2 cup celery sticks
1/2 cup sliced cucumbers
Directions:
Combine all ingredients in a blender and blend for 1 minute. Alternatively, you can mash the avocado with a potato masher or fork and then add the rest of the ingredients.
