7-Minute "Healthy Steamed" Butternut Squash
Winter squash, such as butternut squash, does not have to take a long time to cook. Cut it into small pieces and it only takes 7 minutes!
Prep and Cook Time: 7 minutes
Ingredients:
2 cups Butternut Squash, cubed
3 TBS extra virgin olive oil (or to taste)
1 tsp lemon
sea salt and pepper to taste
Directions:
Fill the bottom of the steamer with 2 inches of water.
While steam is building up cut squash into 1" cubes.
Steam, covered with a tight fitting lid, for 7 minutes.
Transfer to a bowl. For more flavor, toss sweet potatoes with the remaining ingredients while they are still hot.
Serves 2
